Three Ways To Make Pumpkin This Halloween

It's Halloween and everyone is displaying carved pumpkins with a tealight placed in them. Now we thought of getting a little more creative so you can take your Halloween game a notch higher. How do you do that? With some creative Halloween recipe ideas with the pumpkin head that are sure to be a hit at your Halloween special. Ingredients –

Pumpkin (diced) – 150 gms

Carrots (diced) – 40 gms

Garlic – 3-4 cloves

Onions – 1 whole roughly chopped

Celery stalk – 30 gms, roughly chopped

Black pepper – 5-7 gms

Salt – to taste

Olive Oil – 20 ml

Coriander seeds – 4-5 gms

Dried Red Chilies - a couple

Vegetable Stock – 200 ml

To begin –

  1. Preheat the oven to 180 degrees
  2. Dry roast the Black pepper, coriander seeds and dried chili and then using a grinder, powder them.
  3. In a baking tray take the pumpkin, sprinkle the red chili seasoning, olive oil and crushed garlic and mix it well and put it in the oven to roast for about 18-20 mins or until soft and has a bit of the caramelization on the edges.
  4. Meanwhile, heat oil in a pan, add in the roughly chopped carrots, onions, celery stalks and saute them for a couple of mins. Add in the salt and the vegetable stock and simmer for about 5-8 mins.
  5. Once the pumpkin is cooked, add it to the vegetable stock mixture and blend the whole mixture to a smooth liquid and soupy consistency. Adjust the seasoning
  6. Serve hot drizzled with some olive oil and fried garlic flakes if there are any.

Roasted Pumpkin and Feta Cheese Dip 

Ingredients –

Pumpkin (diced) – 100 gms

Yogurt – 50 gms + some for garnish

Feta cheese – 100 gms

Garlic – 2 cloves

Olive Oil – 20 ml

Salt – to taste

Black pepper – 5 gms (freshly grounded)

Chili flakes – 5 gms

The process is simple –

  1. Preheat the oven to 180 degrees
  2. In a roasting pan, take the pumpkin, drizzle the olive oil, salt, black pepper powder, chili flakes and the crushed garlic, mix well and put it in the oven for about 18 mins.
  3. Once is soft, having the nice caramelization on the sides, let it aside to cool down.
  4. In a blender, take yogurt, feta cheese and the roasted pumpkin and blend it to a smooth dip consistency.
  5. Adjust the seasoning and serve with a drizzle of olive oil and some crumbled feta cheese on top

    Pumpkin Hummus

Ingredients –

Pumpkin (diced) – 250 gms

Tahini paste – 15 gms

Lemon Juice – 15 ml

Canned chickpeas – 200 gms

Garlic – 3-4 cloves

Olive oil – 50 ml

Let’s make this interesting Hummus –

  1. Preheat the oven to 180 degrees
  2. In a baking tray, take the pumpkin, drizzle with olive oil, salt and crushed garlic and roast it for about 20 mins until soft.
  3. Once the pumpkin is ready, put it in the blender along with the garlic and the juices in the pan (that’s the good part), the chickpeas, tahini paste and lemon juice and blend it to a smooth paste. Serve it with some vegetables, pita bread and breadsticks.
