Superpower: Sweet potato, especially the variety with orange flesh, is a powerhouse of beta-carotene, an antioxidant which the body converts into vitamin A upon consumption. Vitamin A in turn keeps your vision sharp, skin glowing and problem free, and boosts immunity. According to the Cleveland Clinic, sweet potatoes are also rich in vitamins B6 and C, potassium, calcium, magnesium, and fibre. A source of complex carbohydrates, this starchy vegetable is also a boon for diabetics. A 2004 study published in the journal Diabetes Care found that regular consumption of sweet potatoes can decrease blood sugar levels. The nutritional composition of shakarkandhi also makes it a heart-friendly food and a tasty alternative to white potatoes for weight watchers.
