Insane Versions of Popular Street Foods

The Big List of OTT Street Food and Where to Find Them

It finds a place on every travel itinerary, is a favourite with most college-goers and on the radar for every gastronome. Kolkata’s ghugnee, Delhi’s chaat and kebabs and Mumbai’s vada pav are iconic, and so loved because the fresh ingredients are chopped, curried, grilled or fried right before you, as you await your turn on pavements or in parks, and heartily eat out of cheap plastic plates or newspapers cones marveling at the authentic flavours.

Then there are some enterprising chefs who are pushing the limits, with a twist here or an interesting turn there, giving street food a gourmet flourish. We’ve listed a few insanely creative ones here.

Pav Bhaji
OMG Version:
Pav Bhaji Fondue

It is a dressy version of Mumbai’s favourite roadside meal. The bhaji is turned into a saucy fondue and sprinkled with chopped onions. Crispy croutons (or cheese balls and white dhokla) replace the traditional Pav. The blob of makkhan is mandatory, some things need not change, we say!

Vada Pav
OMG Version:
Dismantled Vada Pav

"In association with @trellfood" . Vada Pav at SpiceKlub, Lower Parel. On the platter here is soft mini ladi pavs, boondi for the crunch and a gravy that tastes like a Vada accompanied by Tamarind, Pundina and Spicy Lasan chutney (which comes in edible plastic packets). Looks like a scientific experiment but tastes exactly like Vada Pav. Such a quirky take on Mumbai's staple snack! . Featured artist: @khyatibvasani Location: SpiceKlub . We think the chef loved her Lego blocks as a kid. Because when it came to ensuring the vada pav on her menu stands out in the clutter, she decided to let you build your own VP. So you’re handed pav, chutney packets you can eat whole (yes, you can gobble up the packaging too), spiced potato balls and besan mousse. Go figure!

The tall glass of lassi has travelled a long way from the villages of Punjab to swish metro restaurants, where it is now served as spheres of flavoured lassi, that pop in your mouth. We rest our case.
