If you don’t like the idea of a sweet(ish) soup recipes, you might find this list of soup recipes hard to digest. But don’t dismiss the soup recipes just yet – the first time I made this mango soup recipes, it was a superb and subtly flavoured concoction that was just so refreshing to eat.

There are dozens of ways to make these soup recipes; one of my favourites is a Gujarati soup recipes, called Fajito. It can be served hot or cold and this mango soup is sweet and tangy at the same time. Other versions are made with coconut milk (so tropical!) and ginger (so healthy!). Here are three awesome mango soup recipes you should try soon.

Fajito Mango Soup Recipe

Ingredients for the Mango Soup Recipe
1 cup mango puree
1 cup dahi or curd
3 tbsp besan or chickpea flour
1/2 tsp red chilli powder
1/2 tsp haldi or turmeric powder
2 tsp jaggery
1/4 tsp hing
Salt, to taste

For the seasoning
1 tbsp ghee
1/2 tsp mustard seeds
1/2 tsp cumin seeds
1 inch cinnamon stick
1 dry red chilli
1 tsp grated ginger
2 slit green chillies
6 curry leaves, finely chopped
1 tbsp coriander

Method for Mango Soup Recipe
1. Add all the puree, dahi, besan, jaggery and seasonings into a saucepan, and add two cups of water. Whisk till they combine well; then bring the mixture to a boil while whisking occasionally. Once it comes to a boil, let the soup simmer for about 10 minutes.
2. Heat ghee in a large saucepan over medium heat; add mustard seeds and cumin seeds allow them to crackle.
3. Add cinnamon, dry red chilli, curry leaves, ginger and green chillies and stir for a few seconds. Check the salt and spice levels and adjust to suit your taste.
4. For the seasoning, heat ghee in another saucepan and then add the mustard and cumin seeds. Allow them to crackle a bit. Next add the dry red chilli, curry leaves, ginger, green chillies and cinnamon and stir for a few seconds.
5. Pour the soup over this seasoning and mix well. Garnish with coriander.

Serving suggestion: This mango soup can be eaten on its own or served as a kadhi along with rice.

Tangy Mango Soup Recipe

Ingredients for Mango Soup Recipe
3 ripe mangoes
100 gm dahi or curd
½ cup coconut milk
½ cup low-fat milk
1 tbsp + 2 tsp lime juice
1 tsp lime zest
2 tsp honey
½ green chilli, minced
1 tsp mint leaves
½ tsp salt

Method for Mango Soup Recipe
1. Slice the mangos into large pieces and drop them in a food processor. Add in the remaining ingredients and blend until smooth.
2. Chill for several hours and serve cold.
Note: This is a thick soup recipe with a smoothie-like consistency.

Spicy Mango Ginger Soup Recipe

Ingredients for Mango Soup Recipe
1 large mango, peeled and destoned
1/2 onion, chopped
1/2 cup cold water
1-2 small chilli peppers, minced (or to taste)
Juice from 1 lime
1/2 tsp grated or minced ginger

Method for Mango Soup Recipe
1. Add all the ingredients in a food processor and blend until smooth; keep adding water until it reaches the desired consistency.
2. Chill for several hours and serve cold.
