It’s always a good idea to have an easy-to-make dessert recipe handy. And in this season of mangoes, we have just the thing for you. Yep, baked mango yogurt!

The baked yogurt requires few ingredients (just 3 or 4, really) and little prep time, but tastes delicious and creamy. It’s like biting into a perfectly-made Baked Philly Cheesecake. And since it’s served chilled, it’s the perfect end to a summer-time meal.

Making it is just as simple: just mix the core ingredients (listed below), and bake for 15- 20 mins. Note that you shouldn’t overcook the yogurt as it firms up as it cools as well. If you do overcook it, it will end up tasting and feeling like dry paneer.

But the biggest plus is that it can be adapted to showcase the fruit of the season, right from strawberries and kiwis to the fruit du jour, mango.

Ingredients:

200g or 8oz. fresh cream (optional)
200g or 8oz condensed milk, sweetened
200g / 8oz plain hung yogurt (dahi)

140ml mangoes, pureed

1/4th tsp ground cardamom

Method:

Mix the yogurt and condensed milk together until the mixture is smooth and silky. Mix in the cream and finally, the mango puree and cardamom.

Pour the mixture into 3 large or 6 small ramekin bowls. Bake at 120 °C for about 15-20 mins or until the yogurt sets. Switch off the oven, and let the ramekins cool in the oven. Refrigerate and serve chilled.
