The cake made its debut in Japan where it was created by chefs at Kinseiken Seika Company in Yamanashi Prefecture. In April this year, it made a star-studded premiere in New York City during the Smorgasburg Flea Food Market. A variation of the Japanese rice cake, the raindrop cake is made with water from the Japanese Alps mixed with agar agar (a vegan gelatin) and shaped into a futuristic wobbly ball.

If you’re wondering how to lay your hands on this glassy wonder, here’s how. The raindrop cake is now available at Wasabi by Morimoto, The Taj Mahal Palace, Mumbai. Sadik Khan, the executive sous chef of the hotel says the raindrop cake has created such a buzz in the gourmet circles “that we had to bring it to Mumbai. This invention is a unique fusion of technology and creativity, it’s a magical sight. Our team recreated this delectable water cake using maple tree water from Hokkaido and agar obtained from algae."

Crazy food: The Water Cake needs to be served chilled and consumed soon after it is made because storing and transporting it is difficult. Thirty minutes after it is served at room temperature, POOF! It breaks down into a puddle—that’s how delicate it is. In Japan, it is served with Kuromitsu (a dark brown sugar syrup) and Kinako (a roasted soybean flour powder), on the side.
