With the year of the Rooster upon us, we are all geared up to celebrate it in style. No party is complete without some bubbly. So, we went a step ahead and stirred up some fancy cocktails with champagne.

Mimosa: This is a universal favourite. Take a chilled champagne flute, pour 60ml orange juice and 120ml brut champagne. Add some orange bitters if you wish.

Air mail: In a cocktail shaker, add some ice. Add 60ml golden rum, 15ml lime juice, 1 teaspoon honey and 150ml champagne. Shake thoroughly and pour into a Collins glass.

Hawaiian magic: Can’t be by the beach this party season? Recreate the magic right here! In a bowl, pour some sugar syrup and in another, some shredded coconut. Now, dip the rim of your champagne flute first in syrup and then in the coconut. Let it dry for a bit. Pour 60 ml each of pineapple juice and coconut water into the champagne flute. Fill the rest with Prossecco or champagne. Serve immediately.

Champagne margarita: This one is quite easy to make. Run a wedge of lime around your margarita glasses and dip it in coarse salt. Stir in 45 ml limejuice with 30 ml tequila and 30 ml triple sec or Cointreau. Fill the rest of the glass with champagne and voila!

Italian twist: Bring magic of the rustic Italian countryside to your backyard with this refreshing cocktail. In a highball glass, add 5-6 raspberries and 3-4 roughly torn basil leaves. Add ice, 30ml limoncello or lemon liqueur, 60ml lemon or regular vodka and stir. Top it off with champagne and serve.
