Remember, we told you about ways to eat your alcohol. Here are some recipes by Chef Amreesh Chandra of The Leela Ambience Convention Hotel, Delhi, that will help you sink your teeth into these spirits.

Baileys Tiramisu

Ingredients:
30gm whipped cream
70 gm Mascarpone cheese
20gm sugar
2 egg yolk
30ml Baileys
15gm coffee powder
2 cats tongue cookie

Method:
In a bowl, take whipped cream and mascarpone cheese and keep it aside.
Make a sabayon of sugar and egg yolk on a double boiler.
Add sabayon and Baileys to the cream and cheese mixture.
Dip the cat’s tongue cookie in coffee syrup. Pour the mixture in the glass.
Sprinkle it with cacao soil on top.


Coconut Baked Yoghurt with Malibu

Ingredients
100gm fresh cream
alcohol100gm coconut cream
100gm milkmaid
100gm sour cream
30ml Malibu
1 tsp raspberry sauce

Method:
Mix all the ingredients together in a bowl and form a smooth mixture.
Pour the mixture into small moulds and bake it on a double boiler at 160Oc for 12minutes.
Serve it cold with raspberry sauce and brandy snap on top

White Chocolate Mousse with Raspberry Jelly and Marie Brizard

Ingredients:
200gm bakery cream
20gm sugar
100gm raspberry puree
5gm gelatin
2 egg yolk
50gm white chocolate
30ml Marie Brizard
30gm dark chocolate sponge
1 sponge cake

Garnish:
Few pieces of mangoes
Berry shot

Method:
In a bowl, whip cream and sugar, and keep it aside.
In the second bowl, soak gelatin and add it to raspberry puree. Keep it separately.
Add egg yolk, white chocolate and Marie Brizard to the cream and sugar mixture.
Place a thin sponge layer of cake on the plate. Make two layers of cream and jelly on top of it.
Let it set in the freezer for 6 hours.
Slice and serve with berry shot and fresh mangoes by the side.

White Forest Pudding with Kirsch

Ingredients:
100gm fresh cream
20gm sugar
40gm dark cherry
30ml Kirsch
30gm white chocolate
20gm dark chocolate sponge

Method:
In a bowl, whip cream with sugar and keep it separately.
Add white chocolate and kirsch to whipped cream
Take a glass and pour cream at the bottom, then add dark chocolate sponge and dark cherry. Repeat the process.
On the top, add white chocolate flakes and dark cherry, and little cacao dust.
