The king of fruits is enjoyed at most stages of its ripeness and we absolutely love the dramatic shift of flavours that makes the sweltering Indian summer bearable. Its versatility is another highlight – you can toss it into a salad, blend it into aamras or smoothie, use it in curries and gravies for a sweet and tangy twist or simply puree into a refreshing cocktail. With the mango season in full swing, we celebrate the king of fruits with a compilation of our best mango recipes. 

Pickles and Chutneys



Khejur Aam Soto Chatni

An after-meal treat from a Bengali kitchen, this is a sweet and tangy chutney made using tomato, date, raisin, fennel seed, ginger, mustard seed, sugar, salt, lemon juice and – wait for it – aam papad!




  Mango Avakaya
Andhra Pradesh’s summer is incomplete without making this fiery mango avakaya pickle. It is a glorious mix of mustard (ava) and mango (kaya) and is loaded with chillies and other spices for that lip-curling experience.






Pomegranate Salsa

Dice tomato, mango, jalapeno and coriander and mix it with pomegranate seeds, lime juice, honey, salt and pepper in a bowl. Chill the mixture in the refrigerator for 15 minutes and your salsa is ready!

Bored of your usual chip and dip combo? Try this mango and avocado salsa. All you need is mango, avocado, onion, minced garlic, jalapeno, coriander, lime, honey, salt and pepper.




Raw Mango Chutney

Why go for store-bought dips when you can whip up this delicious mango chutney in less than 15 minutes at home. Make a large batch and enjoy with dal-chawal, parathas and even chips! Psst…you can even use it in desserts if you please.


6.  Quick Mango Pickle

Spruce up your meals with this instant raw mango pickle aka jhatpat kairi ka achaar. Just add red chilli powder, ground fenugreek seeds, asafoetida, salt, and groundnut oil in a bowl. Add chopped green mango, mix well and your quick mango pickle is ready to eat.


7.  Kairi, Kathal and Sirka Pickle

For this pickle, raw mango, raw jackfruit and sugarcane vinegar are cooked together in water. Then, finished off with a tempering of mustard oil, whole red chilli, fennel seeds, cumin seeds, carom seeds, fenugreek seeds, asafoetida and a few other ingredients before keeping it in the sun.

Grilled Chicken with Mango and Avocado Salad

Aam Man
Crispy on the outside, soft and juicy on the inside, aam man is a ripe mango fritter that can double up as dessert. Mango slices are first marinated in oil and powdered spices such as black pepper and red chilli powder, coated in refined flour and dessicated coconut, and fried until golden brown. 



Chickpea and Mango Sundal

Chickpeas, butter beans, and raw mango are tossed in oil with mustard seed, curry leaves, asafoetida, rock salt, red chilli, turmeric, and grated coconut to make this south Indian snack. It is finished off with lemon juice and coriander leaves.



Cajun Fish Skewers with Mango Salsa

Any firm fish will work for this cajun-spiced appetiser. For this recipe, bite-sized pieces of fish are marinated in a mixture of olive oil and spices. The fish is grilled on a pan and complemented by a side of smoky red bell pepper, onion and mango salsa.

These appetising fish parcels are flavoured with schezwan sauce, soy sauce, mustard paste, chopped ginger, lemon juice, crushed black pepper and salt and baked with lemongrass and raw mango slices.



Masala Papad Taco with Achari Chicken

Achari chicken, which is basically meat cooked in pickling spices, is a popular north Indian delicacy eaten with either naan or rice. Chef Ranveer Brar gives it a Mexican makeover by presenting it as a taco. Instead of a taco shell, this dish uses roasted papad and it is garnished with onion, green apple, mint leaves, and nylon sev.




No wedding in Himachal Pradesh is complete without mahini or mahni. It is a sweet and sour curry made using raw mango and split black gram.
