INGREDIENTS

  • 6 tbsp olive oil
  • 1 tsp black peppercorns
  • 1 tbsp ghee
  • 1 tbsp chopped ginger
  • 1 tbsp chopped garlic
  • 1 carrot
  • 1 cup rice
  • 1 tbsp turmeric powder
  • lemon zest
  • 15 shallots
  • 10 garlic cloves
  • 1 cup vegetable stock
  • few sprigs thyme
  • 1 tbsp ghee
  • water as required

PREPARATION

    In a heated pan add olive oil, black peppercorn, ghee, chopped ginger, chopped garlic and stir it.

    Scrape the skin of carrot and chop it.
  3. 3

    To the pan add rice and stir it well. Add turmeric powder in the rice.

    In another heated pan add olive oil and lemon zest and shallots to the rice and add garlic cloves.

    To the rice add vegetable stock and let it cook.

    In the pan add thyme sprigs, ghee, carrots and mix it. Add water and let it cook,.

    Add water to the rice and let it cook.

    Add the rice in a bowl and place the fried carrot, thyme, garlic on a plate.
  9. 9

    For garnish add lemon and Zingy turmeric broth with glazed carrots is ready to serve.
