To prepare the yogurt base for the dressings add yogurt to a bowl. Season with salt lemon juice, and black pepper powder. Mix well. For the first dressing combine little yogurt base with chopped spring onions in a bowl. For the second dressing add little yogurt base in a bowl. Heat a pan and add turmeric powder water, a few curry leaves, mustard seeds, chopped ginger, red chilli flakes and lemon juice. Mix this with the yogurt base. For the herb yogurt dressing blend together basil leaves, garlic cloves, and little yogurt. Mix this herb mixture with the yogurt base. For black eyed pea and soy milk dressing blend soaked black eyed peas. To this add pine nuts, salt, black pepper powder, mustard paste, and soy milk. Blend well. For the tomato dressing blend some black eyed pea and soy milk dressing with red chillies and tomato paste. Fill all dressings in different jars and preserve. Use dressings as needed.
