INGREDIENTS

  • For zatar flatbread dough
  • 1 cup refined flour
  • salt to taste
  • 2 gm activated yeast
  • 2 tbsp zatar powder
  • 2 tbsp caster sugar
  • 2 tbsp white butter
  • water as required
  • For filling
  • 1 tomato
  • 1 turnip
  • few mint leaves
  • salt to taste
  • 1 tsp black pepper powder
  • 1 pickled chilli
  • ½ cup synthetic white vinegar
  • 4 rocket lettuce
  • 1 tsp zatar powder
  • 2 tbsp caster sugar
  • For dip
  • 4 - 5 tbsp oil
  • salt to taste
  • 1 tsp black pepper powder
  • 1 tsp paprika powder

PREPARATION

    In a bowl add refined flour, salt and the activated yeast.
  2. 2

    Add zatar powder, caster sugar, white butter and mix it well.
  3. 3

    Add water and prepare a dough.
  4. 4

    In a bowl add chopped tomatoes, turnips, mint leaves, salt, black pepper powder and zatar powder.
  5. 5

    Add pickled chilli, synthetic white vinegar, caster sugar, finely chopped rocket lettuce and mix it.

    Roll out the dough over the flour.
  7. 7

    Apply white butter on it.
  8. 8

    Add zatar powder, flour and fold the dough.
  9. 9

    Refrigerate the dough covered in butter paper for 1/2 an hour.

    Roll out the dough, trim it and pinch the sides of it.

    Bake the dough in the pre-heated oven at 180' C for 18 - 20 minutes.

    In a bowl add oil, salt, black pepper powder, paprika powder and mix it.

    Add the mixture to the flatbread, thyme sprigs, add the mixture to the pickle.
  14. 14

    Dip the spinach leaves in the dressing and place it on a plate.

    For garnish add cherry tomatoes, thyme leaves and mint leaves.

    Zatar Flatbread are ready to serve.
