  • 250 grams soaked lentils
  • 3 tbsp olive oil
  • 1 tsp mustard seeds
  • 7-8 curry leaves
  • 1 chopped onion
  • 1 tsp chopped garlic
  • 500 ml vegetable stock
  • 1 glass red wine
  • 3-4 cherry tomatoes
  • mint sprigs
  • salt as per taste
  • 1/2 lemon juice
  • 6-7 crushed hazelnuts
  • pepper as per taste

    In a heated pan, add olive oil, mustard seeds and let it crackle. Add curry leaves, chopped onions and toss it.

    Add chopped garlic, vegetable stock, red wine, soaked lentil and let it cook.

    For salsa, chop the cherry tomatoes. Add mint leaves, salt and pepper as per taste, lemon juice, olive oil, crushed hazelnuts.

    Serve the lentils with salsa.
