INGREDIENTS

  • ¼ cup sliced lotus stems
  • ¼ cup sliced sweet potatoes
  • ¼ cup elephant foot yams
  • 1 tsp chilli flakes
  • 4 to 5 basil leaves
  • 2 to 3 fresh oregano sprigs
  • 1 tbsp coriander
  • 1 tbsp dill leaves
  • black pepper powder
  • salt
  • oil for frying

HOW TO PREPARE WAFERS

    For the wafers finely slice lotus stems, sweet potatoes, and elephant foot yams.

    Deep fry the wafers.
  3. 3

    Drain the excess oil and then transfer them to a bowl.
  4. 4

    Season with salt, black pepper powder, chilli flakes, roughly torn basil leaves, oregano sprigs, and chopped coriander and dill leaves.
  5. 5

    Toss well for a good mix.
  6. 6

    Serve the wafers.
