- garlic paste
- turmeric powder
- salt as per taste
- black peppercorns
- green cardamom
- cumin seeds
- To the pork, add ginger-garlic paste, turmeric powder, salt as per taste, vinegar and leave it to marinate for 5 - 6 hours.
- Prepare a paste of chillies, black peppercorns, green cardamom, cloves, cumin seeds.
- In another heated pan, add oil, chopped onions, ginger-garlic, tomato and saute. Add the marinated chicken and keep on stirring. Add vindalho masala and mix it well.
- Add salt as per taste, water, sugar and let it cook.
- Serve the Vindalho hot.
