INGREDIENTS

  • 2 Leeks
  • 3 Potatoes
  • 1 tbsp Butter
  • Few Thyme springs
  • 1 cup Vegetable stock
  • ½ cup Milk
  • White Pepper
  • 1 tbsp Cream
  • Salt
  • Chive springs
  • Black Pepper

HOW TO PREPARE VICHYSSOISE SOUP

    Roughly chop 2 leaks and slice 3 potatoes.
  2. 2

    Heat 1 tbsp butter in a pan and add chopped leaks, few thyme sprigs and sauté.
  3. 3

    Add sliced potatoes, 1 cup vegetable stock, ½ cup milk and mix.
  4. 4

    Season it with cracked white pepper and simmer till potatoes are cooked.
  5. 5

    Add 1 tbsp cream, salt and boil for 1 minute.
  6. 6

    Cool the mixture and blend it into smooth puree.
  7. 7

    Pour the soup into a cup and garnish it with chopped chives and cracked black pepper.
  8. 8

    Vichyssoise Soup is ready.
