INGREDIENTS

  • For vegan cookie
  • 200 gm all purpose flour
  • 80 ml vegetable oil
  • 1 tbsp castor sugar
  • 2 tbsp almond milk
  • 1/2 tsp salt
  • For chocolate custard
  • 500 gm melted dark chocolate
  • 1 tbsp zest of orange
  • 2 cups almond milk
  • 1 vanilla bean
  • 2 tbsp honey
  • For plating
  • 20 gm crushed vegan cookie
  • 20 gm fresh strawberries
  • 20 gm chopped pistachios
  • 20 gm fresh raspberries
  • 20 gm fresh blueberries
  • whipped cream

PREPARATION

    For vegan cookies, mix all the ingredients together and make a soft dough.

    Roll the dough (thickness – 1 inch) & cut with a round cutter.
  3. 3

    For the filling, mix milk, sugar & split vanilla pod in a small saucepan.
  4. 4

    Heat the mixture until it is almost boiling.
  5. 5

    Add your chopped chocolate to a bowl and pour over the hot milk mixture.
  6. 6

    Stir until combined and all chocolate is completely melted.
  7. 7

    Pour the chocolate mixture into the case & chill for 3-4 hours.
  8. 8

    When serving, serve with fresh berries.
