INGREDIENTS

  • For Pesto :Few basil leaves
  • 5 to 6 spinach leaves
  • 3 to 4 garlic cloves
  • 4 to 5 walnuts
  • 3 tsp Parmesan cheese
  • 2 tbsp olive oil
  • crushed black pepper
  • salt to taste
  • For The Filling :Pesto
  • 4 pita breads
  • 5 to 6 Sundried tomatoes
  • 2 tomatoes
  • 1 cup red bell pepper juliennes
  • 1 tbsp mozzarella cheese grated
  • 1 cup onion sliced
  • 1 tsp jalapenos
  • Crushed black pepper
  • 1 tsp olive oil
  • salt to taste
  • Few basil leaves
  • grated Mozzarella cheese
  • For Grill :1 tsp butter
  • 1 tsp oil
  • For Garnish: Red bell pepper puree
  • Pesto

HOW TO PREPARE VEG PANINI SANDWICH

    For pesto grind basil leaves, spinach leaves, garlic cloves, walnuts, Parmesan cheese, olive oil, crushed black pepper and salt.

    Take a small portion of the pesto sauce in a bowl and add sliced tomatoes, sliced red bell peppers, grated mozzarella cheese, sliced onions, jalapenos, crushed black pepper, olive oil, basil leaves and salt.

    Mix well and allow it to marinate for 3 to 5 minutes.

    Take pita breads and slice them at the centre, top them with some pesto and sundried tomatoes.
  5. 5

    Place the marinated panini filling on them grated cheese and pesto again.
  6. 6

    Top them with the other half of the breads.
  7. 7

    Grill the breads with some butter and oil in a grill pan, garnish with red bell pepper puree and pesto.
