Var is a rice-based dish from Kashmir. Chef Ajay Chopra shares the recipe for Var which is infused with traditional Kashmiri Veri masala. The rice flavoured with spices and containing the crushed spice cakes are too good to resist.

INGREDIENTS

  • FOR Masala Vadi
  • ½ tsp asafoetida
  • 1 cup urad dal flour
  • Pinch of salt
  • 2 tsp red chilli powder
  • 1 tsp fenugreek powder
  • 2 tsp coriander powder
  • 1 tsp garam masala
  • Asafoetida water
  • 6 tbsp mustard oil
  • FOR Var
  • 2 cup Rice & ½ cup Water
  • Salt to taste
  • 1 cup Barian/ Ver Masala
  • 2 chopped green chillies
  • 1 tsp red chilli powder
  • 1 tsp coriander powder
  • 1 tsp dry ginger powder
  • FOR Tadka
  • 2 tbsp ghee
  • 1 tsp asafoetida powder
  • 4 cloves
  • 1 tsp Cumin seeds
  • 10-12 sliced almond

HOW TO PREPARE VAR

    In a bowl, add asafoetida, water and mix it.
  2. 2

    In another bowl, add urad dal flour, add salt, red chilli powder, fenugreek powder, coriander powder, garam masala, asafoetida water, mustard oil and prepare a dough.

    Leave the dough to ferment overnight.
  4. 4

    Make small balls of the dough and sundry it for 3-4 days.
  5. 5

    Crush it.
  6. 6

    In a pan, add rice, water, salt and overboil it.
  7. 7

    Add the crushed vadi, chopped green chilli, red chilli powder, coriander powder and dry ginger powder and mix well.
  8. 8

    Add water and mix again.
  9. 9

    For tadka, add ghee in a pan.
  10. 10

    Add asafoetida powder, cloves, cumin seeds and sliced almonds and roast lightly.
  11. 11

    Once done, pour the tadka in the gravy and serve it hot.
