Twice Baked Potato
An ordinary baked potato becomes something extraordinary when baked twice and stuffed with a delicious veggie mix.

  • 4 potatoes baked
  • 5 garlic cloves
  • 1 onion
  • ½ cup corn
  • 2 to 3 jalapeno chillies
  • 5 broccoli florets
  • 1 tbsp olive oil
  • Cracked black pepper
  • A few pieces of cheddar cheese
  • A few basil leaves
  • salt

    Take some baked potatoes and cut them into two equal halves.

    Scoop out the inside and make potato cups.
  3. 3

    The potato scoops will be used to prepare the stuffing.
  4. 4

    For the stuffing, take some garlic cloves and onion in a blender.
  5. 5

    Add some corn jalapeno chillies and some broccoli florets.
  6. 6

    Blend well.

    Heat olive oil in a pan.
  8. 8

    Saute the ground mixture.
  9. 9

    Sprinkle some salt onto it.
  10. 10

    Add cracked black pepper scooped out potatoes and a few basil leaves.

    The stuffing is ready.

    Fill the potato cups with this stuffing.

    Place cheddar cheese pieces on top of it.

    Pour olive oil on each cup.

    Place all stuffed potato cups on a baking tray and bake them in a pre heated oven at 180 C for three to four minutes.

    Once ready, garnish the twice baked potatoes with sprouts and then serve.
