Tuscan fruit cake

INGREDIENTS

  • FOR 1st Mixture
  • 50 gm almonds
  • 50 gm walnuts
  • 50 gm pistachios
  • 50 gm cashew nuts
  • 50 gm raisins
  • 50 gm green tutty fruity
  • 50 gm red tutti frutti
  • 1 tsp all spice powder
  • 2 tsp cinnamon powder
  • 3 tbsp honey
  • ½ cup red wine
  • ¼ cup white wine
  • ½ cup crumbled white sponge
  • 2 tbsp brown sugar
  • FOR 2nd Mixture
  • 1 cup refined flour
  • 1 tsp baking powder
  • 1 tsp all spice powder
  • 1 tsp cinnamon powder
  • 2 tsp vanilla essence
  • 2 tbsp white wine
  • 1 tbsp brown sugar
  • 4 tsp coffee liquor
  • 1 tbsp olive oil

HOW TO PREPARE TUSCAN FRUIT CAKE

    Procedure to make Tuscan fruitcake: Finely chop the almonds, walnuts, pistachios, cashew nuts, raisins and add them in a bowl.

    Add green tutty fruity, red tutty fruity, allspice powder, cinnamon powder, honey and mix it well.
  3. 3

    Add red wine, white wine, crumbled white sponge, brown sugar and mix it well.
  4. 4

    In a bowl add refined flour, baking powder, allspice powder, cinnamon powder, vanilla essence and white wine.
  5. 5

    Add brown sugar, coffee liquor and mix it well.
  6. 6

    Add olive oil, dry fruits mixture and prepare a batter.
  7. 7

    Add olive oil in the moulds, batter and bake it in the oven at 180' C - 190' C for 30 minutes.

    Demould the cake and cut slices of it.
  9. 9

    To garnish add allspice sauce, parsley sugar, almonds and Tuscan fruitcake is ready to serve.
