INGREDIENTS

  • For the chicken marinade
  • 2 tsp orange juice
  • 2 tsp lemon juice
  • 1 tsp honey
  • 1 tsp red pepper flakes
  • 2 chicken breast
  • For the dressing
  • 1/4 cup extra-virgin olive oil
  • 2 tsp lemon zest
  • 2 tsp lemon juice
  • 2 tsp honey
  • salt
  • pepper
  • For the salad
  • 1 romaine lettuce leaves torn
  • 1/2 cup feta cheese
  • 1 cup green peas boiled
  • 1 avocado sliced
  • 1/2 cup onions sliced
  • salt
  • pepper

PREPARATION

    For the chicken marinade: In a mixing bowl, add orange juice, lemon juice, honey, red pepper flakes and skinless chicken breasts.

    Mix well and marinate it for 30 to 40 minutes.

    Brush the griller with oil and place the chicken over it.

    Grill the chicken for 6 to 8 minutes.

    Flip and grill on both sides. Slice the chicken into small pieces.

    For the dressing: In a mixing bowl, add extra virgin olive oil, lemon zest, lemon juice, honey, salt and pepper.

    Mix well and set aside for 10 minutes.

    For the salad: In a mixing bowl, add romaine lettuce, the grilled chicken pieces, feta cheese, boiled green peas, avocado, sliced onions, salt, pepper and the prepared dressing. Mix well.
