Tomato Bok Choy Broth

INGREDIENTS

  • FOR Soup
  • 3 to 4 tbsp tomato puree
  • 1 tbsp sugar
  • 1½ cup vegetable stock
  • 4 to 5 bok choy leaves
  • salt
  • FOR Croutons
  • 2 to 3 tbsp clarified butter
  • 1 tbsp red chilli flakes
  • 2 cup whole wheat bread pieces

HOW TO PREPARE TOMATO BOK CHOY BROTH

    Heat a pan and add the tomato puree.
  2. 2

    Add sugar and salt.
  3. 3

    Bring it to a boil.
  4. 4

    Add vegetable stock and stir.
  5. 5

    Allow it to cook on a low flame for some time.
  6. 6

    Cut the bok choy leaves and add it to the pan.
  7. 7

    For the croutons, heat the clarified butter in another pan.
  8. 8

    Add the red chilli flakes and chopped whole wheat bread.
  9. 9

    Fry till bread cubes are crisp.
  10. 10

    Arrange the chopped bok choy leaves in a serving bowl.
  11. 11

    Add the prepared croutons first and then and the tomato soup.
  12. 12

    Garnish with sesame oil and red chilli flakes.
