Tofu Marbella

Bored with the same snack every day? Chef Gautam Mehrishi gives a twist to Tofu stuffed with and onions and olives over it. If you love this recipe it can be replaced with chicken too.

INGREDIENTS

  • FOR Tofu Marbella
  • 200 gm tofu
  • 1 chopped onion
  • 1 tbsp chopped garlic
  • 2 tsp white wine vinegar
  • 2 tbsp honey
  • 1 tsp dried thyme
  • 1 tsp black pepper powder
  • 1 tsp paprika powder
  • 5 green olives
  • 5 prunes
  • 2 tsp malt vinegar
  • 1 tsp cumin seeds
  • chopped parsley
  • FOR Mixture
  • olive oil
  • 1 bay leaf
  • 5 shallots
  • 5 green olives
  • 10 capers
  • salt
  • 1 tbsp chopped parsley
  • 1 tbsp honey
  • 1 tbsp malt vinegar
  • 1 tbsp white wine vinegar
  • micro greens

HOW TO PREPARE TOFU MARBELLA

  1. 1

    Procedure to make Tofu Marbella: Trim the tofu and cut it.
  2. 2

    In a bowl add chopped onion, garlic, white wine vinegar, honey and mix it.
  3. 3

    Add dried thyme, salt, black pepper powder and mix it.
  4. 4

    Add red chilli powder and mix.
  5. 5

    Finely chop garlic & olives and add it in a bowl.
  6. 6

    Add malt vinegar, honey, cumin seeds, chopped parsley leaves and mix it.
  7. 7

    Stuff the tofu with onion mixture.
  8. 8

    In a heated pan add olive oil, bay leaves, chopped shallots, olives and toss it.

    Add capers, salt and cook the tofu.
  10. 10

    Add stake over the tofu and add it in the baking tray.
  11. 11

    Stuff the tofu with filling and fold it and add it in the baking tray.
  12. 12

    Bake them in the oven at 160' C - 170' C for 7 - 8 minutes.

    To the pan add onion mixture, chopped parsley leaves, honey, malt vinegar and let it cook.
  14. 14

    To garnish add onion & olive mixture, micro greens and Tofu Marbella is ready to serve.
