Tinda Guacamole with Arepas

Guacamole is traditionally made using avocados. Chef Gautam Mehrishi uses Tinda to make a delicious Guacamole. He serves it with, Arepas, a flatbread made using cornmeal. This recipe is perfect for a healthy breakfast and can be made by following a few simple steps.

INGREDIENTS

  • 2 cup roasted corn meal
  • 2 - 2 1/2 cup warm water
  • salt as per taste
  • 4 round gourds
  • 1 1/2 - 2 tbsp olive oil
  • salt as per taste
  • 2 slit jalapenos
  • 1/2 tsp red chilli powder
  • 1/2 tsp roasted cumin powder
  • FOR guacamole
  • 1 avocado
  • 1 tbsp lemon juice
  • salt as per taste
  • 1 chopped onion
  • 6 - 8 garlic cloves
  • 2 - 3 chopped jalapenos
  • 4 - 5 tbsp olive oil
  • 1 tsp lemon juice
  • coriander sprigs
  • FOR garnish
  • olive oil
  • lemon slice

HOW TO PREPARE TINDA GUACAMOLE WITH AREPAS

  1. 1

    In a bowl add roasted cornmeal, warm water and mix it. Add salt and mix again.

    In another heated pan, add olive oil, slice or round gourd, salt as per taste and leave it to cook. Add slit jalapenos and let it cook. Roughly chop the round gourds. Add red chilli powder, roasted cumin powder and chop again.

    In a bowl, add avocado, lemon juice, salt as per taste and mash it. Add chopped onion, garlic cloves, chopped jalapenos and mix it well. Add olive oil and mix again. Add the round gourd mixture and mix it.

    Add lemon juice, coriander sprigs and mix again.
  5. 5

    Roll out the cornmeal batter and cook it using water until it turns brown from both the sides. Garnish it with olive oil and lemon juice.
