  • 3 tbsp olive oil
  • 2 ridge gourd
  • 2 - 3 tsp lemon grass
  • 2 tsp finely chopped ginger
  • 1 chopped onion
  • salt as per taste
  • 1 tsp turmeric powder
  • 2 - 3 tbsp fish sauce
  • 2 tbsp red chilli paste
  • 1 - 1 1/2 glass vegetable stock
  • 1 cup coconut milk
  • For ridge gourd skin
  • 1 tsp olive oil
  • 1 lemon juice
  • 1/4 tsp salt

  • fried ridge gourd skin
  • red chilli paste
  • microgreens


  1. 1

    In a pan, add olive oil and let it warm. Peel the skin of ridge gourd and cut it into discs. Add the chopped ridge gourd into the pan. Add lemongrass, chopped ginger, onion toss it and mix it.

    Add salt as per taste, turmeric powder, fish sauce, red chilli paste and mix it. Add vegetable stock and leaves it to boil for 5 - 7 minutes. Add coconut milk and leave it to cook on a slow flame.

    In a heated pan, add olive oil, lemon juice, the skin of ridge gourd and toss it. Add salt and toss it.

    Serve the soup hot and garnish it with fried ridge gourd skin, red chilli paste and microgreens.
