INGREDIENTS

  • 1 tbsp olive oil
  • 2 tsp chopped garlic
  • 2 tsp chopped ginger
  • 1 tsp turmeric powder
  • 1 tsp cumin powder
  • 1 tsp all spice powder
  • 2 cups vegetable stock
  • 1 cup red thai curry paste
  • 2 tbsp gelatin powder
  • ½ cup water
  • 1 tbsp xanthan gum
  • For vegetable mixture
  • 1 tsp sunflower oil
  • 2 tsp chopped garlic
  • 2 tsp chopped ginger
  • 1 cup chopped and blanched mix vegetable
  • salt
  • black pepper powder
  • 1 tsp all spice powder
  • 1 cup cooked rice
  • 1 black tofu
  • 1 orange segments
  • micro greens.

PREPARATION

    Heat olive oil in pan, add chopped garlic, chopped ginger, turmeric powder, cumin powder, all spice powder and saute it.

    Pour vegetable stock and red thai curry paste and boil.
  3. 3

    In a bowl, add gelatine powder and water and mix.
  4. 4

    In boiling gravy add xanthan gum, strain the gravy and keep it to cool.

    Heat sunflower oil in pan, chopped garlic, chopped ginger, chopped and blanched mix vegetable, salt, black pepper powder, all spice powder, cooked rice and toss the mixture.

    Pour gravy in soda syphon bottle and freeze for 30 minutes.

    In a bowl arrange rice, tofu, orange segments, olive oil, micro greens and thai curry foam.
