Thai Curry Magic Recipe by Chef Gautam Mehrishi

  • 1 tbsp Olive Oil
  • 2 tsp chopped Garlic
  • 2 tsp chopped Ginger
  • 1 tsp Turmeric powder
  • 1 tsp Cumin powder
  • 1 tsp All Spice powder
  • 2 cups vegetable stock
  • 1 cup Red Thai curry paste
  • 2 tbsp Gelatine powder
  • ½ cup water
  • 1 tbsp Xanthan Gum. For Vegetable Mixture:{ 1 tsp Sunflower Oil
  • 2 tsp chopped Garlic
  • 2 tsp chopped Ginger
  • 1 cup chopped and Blanched mix vegetable
  • Salt to test
  • Black Pepper powder to test
  • 1 tsp All Spice powder
  • 1 cup cooked Rice
  • 1 Black Tofu
  • 1 Orange segments
  • Micro greens.

    Heat olive oil in pan.
  2. 2

    Add chopped Garlic, chopped Ginger, Turmeric powder, Cumin powder, All Spice powder and sauté it.

    Pour vegetable stock and Red Thai curry paste and boil.

    in a bowl, add Gelatine powder and water and mix.
  5. 5

    In boiling gravy add Xanthan Gum.
  6. 6

    Strain the gravy and keep it to cool.

    Heat Sunflower Oil in pan.
  8. 8

    chopped Garlic, chopped Ginger, chopped and Blanched mix vegetable, Salt to test, Black Pepper powder to test, All Spice powder, cooked Rice and toss the mixture.

    Pour gravy in sod a syphon bottle and freeze for 30 minutes.
  10. 10

    In a bowl arrange rice, Tofu, Orange segments, Olive Oil, Micro greens and Thai curry foam.
