INGREDIENTS

  • 1½ cup corn
  • 1 tsp ginger, chopped
  • 2 green chillies, chopped
  • 1 kaffir lime leaf
  • 1 blade Lemon grass, Salt to taste, Black pepper powder
  • 2 tbsp thai green curry paste
  • 2 tbsp lemon juice
  • 1 tsp corn starch
  • FOR tamarind sauce
  • 2 tbsp tamarind pulp
  • 1 tsp ginger chopped
  • 1 tbsp jaggery chopped
  • 1 tsp red chilli flakes
  • Salt to taste
  • FOR granish
  • ginger
  • red chilli flakes
  • Mint leaves

HOW TO PREPARE THAI CORN TIKKI WITH TAMARIND GLAZE

    In a blender, add the corn, chopped ginger, green chillies, kaffir lime leaf, lemon grass, salt, black pepper powder, Thai green curry paste, and lemon juice.

    Blend well.

    Place the blended mixture in a bowl.

    Add some corn starch and prepare a dough.

    Make small tikkis from the dough.

    Slice them to shape and coat with corn starch.

    Fry the tikkis.

    For the tamarind sauce, mix tamarind pulp, ginger, jaggery, red chilli flakes, and salt in a bowl.

    Arrange the sauce and corn tikkis on a plate; decorate with the tamarind glaze.

    Garnish with ginger, red chili flakes and mint leaves.
