Thai Corn Fritters
These crispy Thai corn fritters made from corn, Thai curry paste, basil leaves, lemon leaves and refined flour make for the perfect afternoon snack!

  • 2 fresh corns
  • 1 ½ tsp Thai curry paste
  • 1 tsp basil leaves
  • 1 tsp lemon leaves
  • 1 cup refined flour
  • 1 tsp baking powder
  • salt to taste
  • water as required
  • oil for frying
  • For Garnish: 3 to 4 corn leaves
  • ½ Cucumber
  • Sweet chilli sauce

    Take fresh corn kernels in a bowl.
  2. 2

    Mix with salt Thai curry paste, chopped basil leaves, chopped lemon leaves, refined flour, a pinch of baking powder and a little water.

    Mix by hand until it becomes a thick batter.
  4. 4

    Shape the mixture into small balls, and deep fry in oil on a low flame.
  5. 5

    Remove the fritters and strain the excess oil.
  6. 6

    Decorate martini glasses with corn husks and add the fried corn fritters.
  7. 7

    Cut the cucumber into slices and place it on the plate.
  8. 8

    Garnish with sweet chilli sauce.
