Thai Coconut Soup with Noodles

INGREDIENTS

  • 2 tsp garlic, chopped
  • 2 tsp ginger, chopped
  • 2 Thai bird’s eye chilies, chopped
  • ½ cup button mushrooms, sliced
  • 2 baby corn, sliced
  • 2 tbsp oil
  • 1 tbsp Thai red curry paste
  • 2 cups vegetable stock
  • ½ cup coconut milk
  • 2 tsp lemon juice, Salt to taste, crushed black pepper
  • FOR garnish
  • 1 cup noodlessoaked
  • Coriander sprig
  • Thai Bird’s Eye chili

HOW TO PREPARE THAI COCONUT SOUP WITH NOODLES

    Heat oil in a pan.
  2. 2

    Add chopped garlic, chopped ginger, and chopped Thai bird?s eye chilies.
  3. 3

    In a bowl, add Thai red curry paste and vegetable stock.
  4. 4

    Whisk it well.
  5. 5

    Now, add mushrooms and baby corns in the same pan.
  6. 6

    Fry them well.
  7. 7

    Then, add red Thai curry paste, coconut milk, lemon juice, salt, and crushed black pepper.
  8. 8

    Cook for 5 minutes.
  9. 9

    In a deep plate, arrange boiled noodles in the centre, making a stack.
  10. 10

    Pour Thai coconut soup on the sides and garnish with coriander sprig and Thai bird?s eye chili.
