INGREDIENTS

  • 2 cups basmati rice
  • 1 bowl mixed vegetable
  • 1 cup soya chunks
  • 5 cups water
  • 4 tbsp ghee
  • 1/2 tsp cumin seeds
  • 10 black pepper corns
  • 2 black cardamom
  • 2 bay leaf
  • 1 star anise
  • 2 Onion
  • 1 tsp ginger paste
  • 1 tsp garlic paste
  • 2 tomatoes
  • 3 green chillies slit
  • 1 tsp red chilli powder
  • 1 tsp coriander powder
  • 1/4 tsp turmeric powder
  • 1 tsp Kasoori methi powder
  • 1/2 tsp Garam Masala powder
  • 1 lemon juice
  • 2 tbsp Yogurt
  • 4 tbsp chopped coriander
  • A few mint leaves
  • Salt to taste

PREPARATION

    Heat ghee in a deep pot.

    Add cumin, pepper corns, cardamom , bay leaf, star anise and sauté for 1/2 minute.

    Add the sliced onion and fry till golden brown.
  4. 4

    Add the ginger, garlic paste sauté for a minute.
  5. 5

    Add the tomato, green chillies, All the dry Masala powder sauté for 1/2 a minute ,add the lemon juice , curd and all the vegetables and soy chunks ,salt, and sauté.

    cover and cook till the vegetable are 1/2 done.

    Add the water and bring to boil ,Add the soaked rice and cook till the water evaporates.

    Add the coriander and mint leaves, reduce the flame , cover and cook till the rice is done.
