- 1/2 cup milk
- 1 tsp assam leaves
- tea masala
- 3 egg yolks
- 3/4 cup brown sugar
- 400 grams of cream
- For garnish
- mint leaves
- In a pan, add milk and let it heat. Add Assam tea leaves, tea masala.
- In a bowl, add egg yolks, brown sugar and whisk it nicely. Add cream and mix it well. Strain the tea in the mixture.
- Fill the ramekin with the mixture. Fill the baking tray with water, add the ramekins. Bake it in the preheated oven at 165'C for 35 - 40 minutes.
- Refrigerate the mixture for 2 hours. Garnish with brown sugar, mint leaf. Caramelize the brown sugar with a blow torch.
