  • FOR Tawa Tarkari
  • 6 lady’s fingers
  • 2 to 3 bitter gourds
  • 4 to 5 spring onion whites
  • 3 brinjals
  • 1 tsp red chilli powder
  • 1 tsp turmeric powder
  • 1 tsp coriander powder
  • Salt
  • 1½ tsp lemon juice
  • 8 to 10 cherry tomatoes
  • 2 tbsp oil
  • FOR Gravy
  • fried Onions
  • Yogurt
  • 1 tbsp oil
  • 3 tbsp tomato puree
  • 1 tsp red chilli powder
  • 1 tsp turmeric powder
  • 1½ tsp coriander powder
  • Salt
  • Water
  • 1½ tsp cream


  1. 1

    Slit vertically the lady's fingers and bitter gourds (peel the skin and deseed).

    Halve the spring onion whites and make four slits on the the brinjals.
  3. 3

    In a bowl, add these vegetables and sprinkle red chilli powder, turmeric powder, coriander powder, salt, lemon juice, and cherry tomatoes.

    Mix well and let them rest for some time.
  5. 5

    To make fried onions and yogurt paste, blend fried onion and yogurt in a mixer until smooth.

    In a pan, heat oil and add the fried onions and yogurt paste and tomato puree.

    Saute well.

    Add red chilli powder, turmeric powder, coriander powder, salt, water (to blend well), and cream.

    In another pan, heat oil and add the marinated vegetables.
  10. 10

    Sprinkle water to moisten them and accelerate cooking.

    Pour the gravy on top and garnish with mint leaves.
