Sweet Potato & Radish with Soy Glaze

  • 1 red radish
  • ½ white radish
  • 1 sweet potato
  • 1 tbsp vegetable oil
  • 2 spring onion greens
  • 1 tsp ginger
  • 1 tsp garlic
  • 1 tsp green chillies
  • 1 tsp soy sauce
  • 2 tsp sugar
  • Few coriander leaves
  • salt
  • water

    Peel the radishes.
  2. 2

    Thinly slice them and the sweet potato in roundels.
  3. 3

    Soak them in water for some time.
  4. 4

    Chop spring onions and add to the same bowl of water.
  5. 5

    Heat vegetable oil in a pan.
  6. 6

    Saute chopped spring onion ginger, garlic, and red chillies.
  7. 7

    Add drained vegetables.
  8. 8

    Season with salt.
  9. 9

    Add soy sauce, water, and sugar.
  10. 10

    Toss the vegetable mix.
  11. 11

    Add some chopped coriander leaves.
  12. 12

    Cook for 5 to 6 minutes on a low flame.

    Serve sweet potato and radish with soy glaze by garnishing with spring onion greens and some mint leaves.
