INGREDIENTS

  • 1 cup sweet potato sliced
  • 2 eggs
  • 1 tbsp butter
  • 1 tsp Worcestershire sauce
  • 1 tbsp brown sugar
  • 3 tbsp cream
  • 6o range wedges
  • black pepper powder
  • salt
  • 2½ tbsp brown sugar
  • 1½ cup orange juice
  • 4 orange wedges
  • Mint leaves

PREPARATION

    Fill the silicone moulds with sweet potato slices. For the custard, whisk the eggs in a bowl. Add butter black pepper powder, salt, worcestershire sauce, and brown sugar. Beat well. To add richness to the custard mixture, add cream and beat again. Pour this custard over the sweet potato slices in the baking moulds. Halve the orange wedges lengthwise. Discard the seeds. Place the wedges on the custard coated sweet potato slices. Bake for 10 min at 180 C in a pre heated oven. For the sauce, melt brown sugar in a heated pan. Pour orange juice. Stir the sauce till it thickens. Unmould out the baked pudding. Make a layer of sauce in the serving plate. Place the pudding on it. Coat the orange wedges with the remaining orange sauce. Pour a little juice on the top of the wedges. Garnish the pudding with these orange wedges and some mint leaves.
