Sweet Potato Frittata
Filling sweet potato frittata, best to make when you are in no mood of extensive cooking, but curious to try a new recipe in a jiffy.

  • 2 tbsp butter
  • 1 cup potatoes sliced
  • 1 cup sliced sweet potatoes
  • salt
  • black pepper powder
  • 2 eggs
  • 1 cup Fresh cream
  • 1 cup red
  • yellow and green bell peppers
  • ½ cup onions
  • 3 to 4 sprigs parsley
  • Lemon juice
  • Butter for greasing
  • Parsley sprig

    In a pan add butter, potato slices, and sweet potato slices, salt, and black pepper powder.

    Cook for sometime then add julienned red, yellow, and green black peppers, julienned onions, parsley sprigs, and lemon juice.

    In a bowl, beat the egg yolks.
  4. 4

    Add fresh cream and black pepper powder.
  5. 5

    Mix well.

    Using a brush, grease the mould with butter, add the mixture and the beaten egg above it.
  7. 7

    Pre heat an oven and bake frittata for 15 min at 180 C.

    Unmould frittata in the serving plate and cut into four, using a cutter.
  9. 9

    Garnish with a parsley sprig.
