INGREDIENTS

  • FOR the tikki
  • 1 cup surti papdi seedsblanched
  • ½ cup paneergrated
  • 1 tbsp coriander chopped
  • 2 tbsp onionsfinely chopped
  • 1 tbsp ginger chopped
  • 1 tsp green chillies chopped
  • 1wedgelemon juice
  • Salt to taste
  • 1-2 tsp red chilli powder
  • A pinch of cumin powder
  • A pinch of raw mango powder
  • 1 tbsp butter
  • 1 tbsp oil
  • FOR the curd chutney
  • 1 cup curdbeaten
  • ½ cucumbergrated
  • Salt to taste
  • 1wedgelemon juice
  • 1 tsp White sesame seeds roasted
  • Black pepper powder as required
  • Spring onions as requiredfinely chopped
  • FOR garnish
  • chilli flakes
  • papad roasted
  • coriander leaves

HOW TO PREPARE SURTI PAPDI KI TIKKI

    Add the blanched surti papdi seeds to a bowl and mash them well.
  2. 2

    Add grated paneer, chopped coriander, finely chopped onion, chopped ginger, chopped green chillies, lemon juice, salt, red chilli powder, and cumin powder and raw mango powder to the same bowl.

    Mix all the ingredients well and prepare a dough.
  4. 4

    Make small tikkis from the dough.
  5. 5

    Heat 1 tbsp butter and 1 tbsp oil in a frying pan.
  6. 6

    Shallow fry the tikkis on both sides until golden brown and remove them in a plate.
  7. 7

    To make curd chutney, add the beaten curd and grated cucumber to a bowl.
  8. 8

    Mix them well.
  9. 9

    Add salt, lemon juice, roasted white sesame seeds, and finely chopped spring onions to the bowl and mix all the ingredients well.

    Add crushed black pepper and mix well.
  11. 11

    Serve the tikkis and the chutney in a plate and sprinkle some chilli flakes.
  12. 12

    Garnish the tikkis with roasted papad and coriander leaves.
