  • 1 cup yellow zucchini
  • 1 cup green zucchini
  • 1 cup boiled potatoes
  • 1 cup beans
  • 1 cup blanched broccoli florets
  • 1 tbsp garlic cloves
  • 1½ tsp chilli flakes
  • 2 tsp lemon juice
  • ½ tsp orange zest
  • salt
  • 2 to 3 fresh thyme
  • water
  • 1 tsp olive oil

    In a bowl mix chopped yellow and green zucchini (both blanched), boiled and chopped potatoes, blanched and chopped beans, blanched broccoli florets, finely chopped garlic cloves, chilli flakes, lemon juice, orange zest, salt, and fresh thyme.

    Toss well.

    Boil water in a pot.
  4. 4

    Place a butter paper on a foil sheet.
  5. 5

    Transfer the marinated vegetables at the centre of the sheet and close from all the sides to resemble a hamper.

    Cook the hamper in the boiling water by closing the lid of the pot.
  7. 7

    Transfer the hamper to a plate, open it, and check whether the veggies are boiled.
  8. 8

    Drizzle olive oil on the veggies.
  9. 9

    In the serving plate, arrange the vegetables as per your choice.
