Suran ki Sabji and Poori
The Yadav weddings in Bihar have a special menu and suran ki sabji is an important part of that menu. Chef Ajay Chopra shares the recipe for this yummy suran ki sabji which can be enjoyed with poori as well as roti.

INGREDIENTS

  • FOR Ingredients to prepare Suran ki Sabji & Poori
  • 500 gm suran
  • 2 tbsp mustard oil
  • 1 tbsp cumin seeds
  • A pinch of asafoetida
  • 5 - 7 cloves
  • 2 black cardamom
  • 2 bay leaves
  • 2 - 3 green cardamom
  • 2 onions, sliced
  • 1 tbsp ginger - garlic paste
  • 1 tbsp turmeric powder
  • 2 tbsp coriander powder
  • 2 chopped tomatoes
  • Salt as per taste
  • Water as requied
  • FOR Frying yam
  • 2 tbsp mustard oil
  • 1/2 cup curd
  • 2 green chillies
  • Coriander sprigs
  • 1 tbsp red chilli flakes
  • FOR Garnish
  • Fresh coriander leaves

HOW TO PREPARE SURAN KI SABJI AND POORI

    Procedure to make Suran ki Sabji & Poori.

    In a pan add water, soaked yam and let it boil.
  3. 3

    For frying yam, add mustard oil in a pan and shallow fry the yam until it turns crispy and brown.
  4. 4

    In a heated pan add mustard oil, cumin seeds, a pinch of asafoetida, cloves, black cardamom, bay leaves and green cardamom.

    Add sliced onions and let it turn golden brown.
  6. 6

    Add ginger - garlic paste and let it cook.
  7. 7

    Add water and mix again.
  8. 8

    Add turmeric powder, coriander powder, salt as per taste and mix it well.
  9. 9

    Add chopped tomatoes and let it cook.
  10. 10

    To the gravy add curd and let it cook.
  11. 11

    Add green chillies and stir it.
  12. 12

    Strain the gravy in a bowl.
  13. 13

    Add the gravy in a heated pan, fried yams, red chilli flakes.
  14. 14

    Garnish the sabji with fresh coriander leaves and, it is ready to serve with poori.
