Suran Ke Kabab

If you’re a vegetarian but love Kababs (which are mostly non-vegetarian), then you should try this recipe of Suran Ke Kabab shared by Chef Ranveer Brar. This recipe is truly unique and uses suran (Yam), paneer and jaggery to make the kababs. The kababs are delicious, smoky and will melt in your mouth.

INGREDIENTS

  • ½ kg yam
  • oil
  • water
  • salt
  • ½ tsp red chilli powder
  • ½ tsp turmeric powder
  • 2 tsp mustard oil
  • 2 tbsp clarified butter
  • 1 tbsp black cumin seeds
  • 1-2 green chillies
  • ½ tbsp garlic paste
  • ½ tsp mace powder
  • ½ tsp cardamom power
  • lemon Juice as required
  • ½ tsp jaggery powder
  • 1 chappati
  • black peppercorn
  • 1 burning coal
  • 1 tbsp clarified butter
  • 1-2 tbsp clarified butter
  • 50 gm paneer
  • mint chutney
  • coriander leaves

HOW TO PREPARE SURAN KE KABAB

  1. 1

    Remove the skin of yam and cut it into pieces.
  2. 2

    In a cooker and add yam, water, chilli powder, turmeric powder and mustard oil and cook.
  3. 3

    Switch off after 2 whistles.
  4. 4

    Remove the yam and mash it. Take a pan, add clarified butter, black cumin seeds and mashed yam and cook well.
  5. 5

    Add finely chopped green chillies, salt, ginger paste, garlic paste, mace powder, cardamom powder and lemon water.

    Add jaggery powder and mix well.
  7. 7

    To give smoky effect, place a chapatti in the middle of yam, some pepper corns, burning coal and ghee on top of the chapatti. Cover it with a lid and switch off the stove.

    Take a bowl, add grated paneer, chopped coriander and salt. Make the yam into small balls.
  9. 9

    Press the paneer fillings into each ball and close them and flatten them. Take a pan and heat ghee in it and shallow fry the kebabs.
  10. 10

    Serve it with mint chutney.
