INGREDIENTS

  • 1 sugarcane
  • 6 - 7 lemongrass stem
  • For marination
  • 1 onion
  • kaffir lemon leaves
  • 1 - 2 tbsp fine turmeric
  • 2 chopped red chillies
  • 1 tsp lemon grass
  • 1 tsp finely chopped ginger
  • 1 tsp finely chopped garlic
  • 1/2 tsp green chilli
  • 1 tsp bottom part of the lemongrass
  • 1 tsp palm jaggery
  • 1 tbsp lemon juice
  • 2 tsp soy sauce
  • 2 tsp tamarind paste
  • 1 cup sugarcane juice
  • 5o gm tofu
  • banana leaf
  • For sauce
  • 2 - 3 tbsp olive oil
  • 1 sliced onion
  • 1 tsp fine raw turmeric
  • 1 cup leeks
  • 1 tsp cumin seeds
  • 1 tsp coriander seeds
  • 1 tsp chopped thai ginger
  • 1 cinnamon & star anise
  • 1 cup spring onion
  • 1 cup sugarcane juice
  • salt as per taste
  • 1/2 tsp roasted cumin seeds powder
  • 2 tsp tamarind paste
  • 1/2 cup coconut milk
  • 1 tbsp honey
  • 1/2 tsp refined oil
  • 1 tbsp coconut oil
  • For garnish
  • spring onions
  • chopped beans
  • coconut milk
  • red chilli powder

PREPARATION

    For preparing marination, in a blender jar, add onion, kaffir lemon leaves, fine turmeric, chopped red chillies, lemongrass. Add finely chopped ginger, garlic, green chilli, the bottom part of lemongrass, palm jaggery, lemon juice. Add soy sauce, tamarind paste, sugarcane juice and blend it.

    In a heated pan, add sugarcane, lemon grass stem and leave it to caramelise. Prepare a base using banana leaf. Cut the slices of tofu and marinate it in the paste. Add the marinated tofu over banana leaves and let it cook.

    In a heated pan, add olive oil, sliced onion, finely chopped raw turmeric, leeks, cumin seeds, coriander seeds, chopped Thai ginger, cinnamon and star anise. Add chopped spring onion, sugarcane juice, salt as per taste, roasted cumin seeds powder, tamarind paste and let it cook.

    Add coconut milk, honey, and keep stirring. Add refined oil, coconut oil and let it cook well.

    For presentation, caramelise a piece of sugarcane, place the tofu over it and pour the sauce. Garnish with chopped beans, spring onions, coconut milk and red chilli powder.
