INGREDIENTS

  • 2 tbsp oil
  • 1 tsp chopped garlic
  • 1 tbsp chopped onion
  • 1 cup carrot juliennes
  • 1 cup chopped red cabbage
  • 1 cup chopped mushrooms
  • 1 cup green bell pepper juliennes
  • 1 cup rice boiled noodles
  • 1 tsp hot sauce
  • ½ tsp seasoning powder
  • 1 tbsp chopped coriander
  • salt to taste
  • For Garnish: grated cheese
  • Pesto sauce

HOW TO PREPARE STUFFED TOMATO

    Cut the top portion of the tomatoes and scoop out the insides making a pocket, cut the bottom slightly to let it stand upright.

    Heat a little oil on a tawa and place these tomatoes in the hot oil and cook all sides.
  3. 3

    Heat oil in another pan and add garlic, onion (both chopped), carrot juliennes, red cabbage, mushrooms (both chopped) and green bell pepper juliennes mix well and cook.

    Add boiled rice noodles to the vegetables and mix with salt, hot sauce, seasoning powder and chopped coriander and mix again after this stuffing for tomatoes is ready.

    Fill the tomatoes with this mix.
  6. 6

    Top it with grated cheese and pesto sauce.
