INGREDIENTS

  • 4 pieces Lamb Leg (Shanks)
  • 1 cup Tomato Paste
  • 1 tbsp White Vinegar
  • 2 Pimento
  • 9to10 Shallots (Peeled)
  • 7 – 8 Cloves Garlic Cloves
  • 2sprigs Rosemary
  • 3 Bay Leaves
  • To Taste Salt
  • As Needed Olive Oil
  • 40 gms Halloumi Cheese. For Accompaniment:{Steamed Rice}

HOW TO PREPARE STIFADO

  1. 1

    Marinate lamb shanks in a bowl with1 cup tomato paste, 1 tbsp vinegar, salt to taste and 2 roughly crushed pimentos or sweet peppers.

    Warm olive oil in a pan, add 10 shallots,8 garlic cloves and rosemary sprig.
  3. 3

    Switch off the gas and add the marinated lamb to the pan.
  4. 4

    Cover the pan with aluminium foil and bake at 170 degree for 1½ hours.
  5. 5

    In a grill pan warm olive oil and fry 40 gms halloumi cheese.
  6. 6

    Remove Stifado from the oven , add grilled halloumi cheese on top of the dish.
  7. 7

    And serve Stifado with hot steamed rice.
