INGREDIENTS

  • FOR Steamed Cornbread
  • ½ cup all purpose flour
  • ½ cup corn flour
  • 1 tsp sugar
  • 1 tsp yeast
  • 1 tsp Yogurt
  • 2 to 3 tsp Sweet corn kernels
  • Water
  • ½ tsp baking powder
  • FOR Salad
  • 1 avocado wedged
  • 1 chopped papaya
  • ½ cup shrimps
  • ½ cup Sweet corn kernels
  • 1 tsp lemon juice
  • Black pepper powder
  • Salt
  • Few coriander leaves
  • 1 tsp Olive oil

HOW TO PREPARE STEAMED CORNBREAD

    Knead a dough with all purpose flour corn flour, sugar, yeast, yogurt, sweet corn kernels, water, and baking powder.

    Grease a ramekin with butter.
  3. 3

    In a ramekin, transfer the dough and cover for proving the dough.
  4. 4

    Steam cornbread for 25 min.
  5. 5

    Top the cornbread with sugar and caramelise the sugar.
  6. 6

    For the salad, combine chopped avocado, papaya, shrimps, sweet corn kernels, lemon juice, black pepper powder, salt, coriander leaves, and olive oil in a bowl.

    Mix well.
  8. 8

    Serve steamed cornbread with tortilla, avocado wedges, and salad.
