INGREDIENTS

  • FOR Squash Chili Style
  • 2 tbsp Soya Sauce
  • 2 tsp chopped Garlic
  • 2 tsp Curry powder
  • 1 tsp Red chilli flakes
  • ½ cup chopped Onion
  • 2 tsp chopped Ginger
  • 2 tbsp Red chilli paste
  • 1 Yellow Squash
  • 1 Green Squash
  • Olive Oil
  • 4 to 5 Spring Onion stalks
  • ½ cup Honey.
  • FOR Sauce
  • 2 tbsp Sunflower Oil
  • 3 to 4 Green chillies
  • 2 tsp chopped Garlic
  • 2 tsp chopped Ginger
  • 2 tbsp chopped Onion
  • 2 tbsp Ginger juice
  • 3 tbsp Red chilli paste
  • 3 tbsp Honey
  • 1 tbsp Red chilli flakes
  • 1 cup Shallots
  • 2 tsp Curry powder
  • 2 tsp Soya Sauce
  • 1 tsp Paprika powder
  • Water
  • 1 tsp Cumin powder
  • 2 tsp black Pepper corn
  • 2 tsp Coriander seeds
  • 1 tsp Vinegar
  • Micro greens
  • Dry Thyme powder.

HOW TO PREPARE SQUASH CHILI STYLE

    In a bowl, add Salt, Soya Sauce, chopped Garlic, Curry powder, Red chilli flakes, chopped Onion, chopped Ginger, Red chilli paste and mix the marination well.

    Cut Yellow Squash, Green Squash in two halves.
  3. 3

    Cut Spring Onion stalks in two halves.
  4. 4

    Grease baking dish with Olive Oil.
  5. 5

    Place Spring Onion and Zucchini.
  6. 6

    Mix honey in marination.
  7. 7

    Spread the marination on squash.
  8. 8

    Spray Olive Oil.
  9. 9

    Close the lid.
  10. 10

    Cook on coal for 15-20 minutes.

    For Sauce: In marination bowl, add green chillies, chopped Garlic, chopped Ginger, chopped Onion, Ginger juice, Red chilli paste, Honey, Curry powder, Soya Sauce, Paprika powder, water and mix well.

    Heat oil in a pan add cocktail Onion, Cumin powder, black Pepper corn, Coriander seeds, Prepared mixture, Vinegar and sauté the mixture.

    Cut cooked Zucchini.
  14. 14

    Serve with Prepared Sauce.
  15. 15

    Garnish with Micro greens, Dry Thyme powder.
