INGREDIENTS

  • For spiced brioche buns
  • 1 cup refined flour
  • 1 cup whole wheat flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 cup buttermilk
  • rock salt to taste
  • olive oil
  • 1 tbsp sunflower seeds
  • 1 tbsp flax seeds
  • 1 tsp Hungarian paprika powder
  • 1 tsp black pepper powder
  • For glaze
  • olive oil
  • 1 tsp sunflower seeds
  • 1 tsp flax seeds
  • 2 tbsp sugar
  • rock salt to taste
  • 2 tsp baking powder
  • 3 tbsp buttermilk
  • water as required

PREPARATION

    In a bowl add refined flour, whole wheat flour and mix it.
  2. 2

    Add baking powder & soda, buttermilk, rock salt and mix it well.
  3. 3

    Add olive oil, sunflower seeds, flax seeds, Hungarian paprika powder, black pepper powder, buttermilk and prepare a dough.

    Add the dough into the moulds.
  5. 5

    Add flax seeds, rock salt, sprinkle wheat flour and bake it in the oven at 160' C - 170' C for 18 - 20 minutes.

    In a heated pan add olive oil, crushed sunflower and flax seeds, sugar, rock salt and mix it.

    In a bowl add black pepper powder, buttermilk and add this mixture into the pan.
  8. 8

    Add water and let it glaze.

    On a plate brush the glaze, add buns.
  10. 10

    For garnish add sunflower and flax seeds, black pepper powder and Spiced brioche buns are ready to serve.
