  • FOR Spanish Patatas Bravas
  • 2 to 3 boiled potatoes
  • crushed black pepper
  • 3 to 4 chopped garlic cloves
  • 1 tbsp Olive oil
  • salt to taste
  • Oil for greasing
  • All purpose flour for dusting
  • FOR Tomato Sauce
  • 2 tomatoes; 2 to 3 garlic cloves; 1 tsp red chilli powder; 2 tbsp oil; 1 onion; 1 tbsp tomato puree; salt; Crushed black pepper powder; Coriander leaves

    Chop the garlic gloves and make wedges of the boiled potatoes (retain the skin).
  2. 2

    In a mixing bowl, add olive oil, chopped garlic cloves, salt, and pepper.
  3. 3

    Add the potato wedges to this mixture.
  4. 4

    Coat them well.
  5. 5

    Grease a baking tray with oil and dust some refined four.
  6. 6

    Place the potato wedges in the tray.
  7. 7

    Drizzle oil over the wedges and season with salt and pepper.
  8. 8

    Bake for 10 to 15 minutes in a pre heated oven at 180 C.

    For the tomato sauce, heat oil in a pan and add chopped garlic cloves, onions, and tomatoes.

    Add tomato puree and season with salt, black pepper, and red chilli powder.
  11. 11

    Add some chopped coriander leaves.
  12. 12

    Cook well for 3 to 4 minutes until a mushy sauce is formed.
  13. 13

    In the serving plate, place blobs of sauce unevenly and then arrange the baked wedges in between.
  14. 14

    Garnish the wedges with grated mozzarella cheese and some coriander sprigs.
