INGREDIENTS

  • 1 onion
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 3 to 4 tbsp olive oil
  • 7 to 8 chicken pieces
  • salt
  • black pepper powder
  • 3 chicken sausages
  • 2 tsp chopped garlic
  • 7 to 8 sundried tomatoes
  • 1 cup chopped tomatoes
  • ½ tsp thyme dried
  • 2 tbsp tomato puree
  • 1 cup coaked brown rice
  • 1 tsp paprika
  • 1 cup white wine
  • 2 cups chicken stock
  • 1 orange
  • ½ cup black olives sliced
  • salt
  • black pepper powder
  • finely chopped parsley leaves

HOW TO PREPARE SPANISH CHICKEN BASQUE

    Cut the onion red bell pepper and yellow bell pepper into strips.
  2. 2

    Take the chicken pieces and season with salt and black pepper powder.
  3. 3

    Heat olive oil in a deep pot and lightly sear the seasoned chicken pieces.
  4. 4

    Set aside in a bowl.
  5. 5

    Add sliced onions and sliced bell peppers to the same pan.
  6. 6

    Cut the chicken sausages into pieces and add it to the pot.
  7. 7

    Add the chopped garlic, sun dried tomatoes, finely chopped tomatoes, dried thyme, tomato puree, soaked brown rice, salt, black pepper, paprika, white wine, chicken stock and the chicken pieces.

    Mix well.

    Cut the orange into wedges and add it to the pan.

    Add the sliced black olives and the finely chopped parsley leaves and mix.

    Cover with a tight fitting lid and cook on a low flame for 40 minutes.

    Put off the flame and rest the chicken basque for 10 minutes.

    Serve hot in a bowl.
