Spaghetti with Soy Bolognese

This luscious spaghetti with soy Bolognese, makes for a great recipe.

INGREDIENTS

  • 1 cup soaked soy granules
  • 250 gm spaghetti pasta
  • 7 to 8 garlic cloves
  • 2 to 3 tomatoes
  • 1 onion
  • 1 Red chilli
  • 1 tbsp olive oil
  • 2 tsp tomato puree
  • salt
  • 1 tsp sugar
  • crushed black pepper
  • water
  • 6 to 7 mushrooms sliced
  • Parsley leaves
  • 1 tsp soy sauce
  • 1 tbsp tomato juice
  • 20 gm Parmesan cheese
  • Few basil leaves
  • 1 tbsp olive oil
  • grated Parmesan cheese
  • Basil leaves
  • Extra virgin olive oil

HOW TO PREPARE SPAGHETTI WITH SOY BOLOGNESE

    Blend onion garlic cloves, tomato, chilli and olive oil in a mixer.
  2. 2

    Heat oil in a pan and stir fry the soaked soy granules.
  3. 3

    Add the ground mixture and cook on a low flame.
  4. 4

    Also add tomato puree, salt, sugar, crushed black pepper and water as required.
  5. 5

    Add sliced mushrooms, chopped parsley, tomato juice, fresh basil leaves and soy sauce and cook for 3 to 4 minutes.

    In a separate pan, cook spaghetti pasta in water and salt.
  7. 7

    Before draining the water add some pasta water to the cooked soy Bolognese.
  8. 8

    Drain the water and pour the spaghetti into the soy Bolognese and mix well.
  9. 9

    Add some Parmesan cheese and mix.
  10. 10

    Plate it with Parmesan cheese.
  11. 11

    Garnish with basil leaves and extra virgin olive oil.
