Blend onion garlic cloves, tomato, chilli and olive oil in a mixer. Heat oil in a pan and stir fry the soaked soy granules. Add the ground mixture and cook on a low flame. Also add tomato puree, salt, sugar, crushed black pepper and water as required. Add sliced mushrooms, chopped parsley, tomato juice, fresh basil leaves and soy sauce and cook for 3 to 4 minutes. In a separate pan, cook spaghetti pasta in water and salt. Before draining the water add some pasta water to the cooked soy Bolognese. Drain the water and pour the spaghetti into the soy Bolognese and mix well. Add some Parmesan cheese and mix. Plate it with Parmesan cheese. Garnish with basil leaves and extra virgin olive oil.
