Soybean Salad
Boiled soya beans, soaked moong dal, grated carrots, bell peppers, chopped dill leaves, grated paneer are some of the many ingredients used to make this sumptuous and nourishing salad.

  • ½ cup boiled soya beans
  • 3 tsp moong dal
  • ½ cup carrots
  • ½ cup red bell pepper
  • 1 tsp dill leaves
  • ¼ cup paneer
  • ¼ cup coriander leaves
  • ¼ cup spring onions
  • 1 tbsp oil
  • 1 tsp black salt
  • 1 tsp vinegar
  • ½ cup curd
  • 1 cucumber
  • salt
  • black pepper
  • ¼ cup basil seeds
  • salt
  • 1 lemon
  • ½ degi mirch
  • Green garlic
  • Cherry tomato

    In a mixing bowl add boiled soybeans, soaked moong dal, grated carrots, red bell peppers, chopped dill leaves and grated paneer.

    Mix it well and allow it to rest for some time.
  3. 3

    For the dressing: Grind chopped coriander leaves, chopped spring onions, oil, chopped garlic, black salt, black pepper, white vinegar and curd in a mixer grinder.

    Add the ground mixture to the prepared salad and mix them well.

    For the plating: Take long sliced cucumber, and sprinkle salt and crushed black pepper over it.

    Grease the ring mould with oil.

    Take two slices of cucumber and roll them.

    Place it inside the ring mould.

    Then, pour the prepared salad in the hollow space created by the slices of cucumber inside the mould and place it onto a plate.

    To garnish: In a mixing bowl, add soaked basil seeds, salt, lemon juice and degi mirch.

    Mix it well and pour it over the prepared salad.

    Sprinkle red chilli powder over it and garnish it with cherry tomatoes, green garlic stalk.
